There's something so comforting and nostalgic about a vanilla pound cake. It's a dessert that has stood the test of time, gracing tables for centuries with its simplicity and rich, buttery flavor. Things you will need,
- Flour: 100 gm
- Powdered sugar: 100 gm
- Eggs : 2 ( roughly weighing 100gm )
- Butter : softened 100gm
- Vanilla essence: 2 tsp
- Baking soda: 2 tsp
- Baking powder: 4 tsp
How I made it,
- Add softened butter and sugar together in a bowl and start beating with a whisk or hand mixer on medium speed. Cream the butter till it becomes pale , fluffy and sugar dissolves.
- Add in eggs one by one , while whisking. The mixture should become almost doubled in volume by now.
- Mix in vanilla essence
- Sift in flour , baking powder and baking soda to the mixture. With a metal spoon fold it in to make a thick batter.
- Line a loaf tin with parchment and butter.
- Pour in the cake batter.
- It will be baked low and slow. In a preheated oven baked at 160°c with fan on for 40 -45 mins , or till the tooth pick inserted at the centre comes out clear.
- Let it cool down , slice it up and devour.
