Vanilla Pound Cake: A Timeless Classic

Hello readers!

There's something so comforting and nostalgic about a vanilla pound cake. It's a dessert that has stood the test of time, gracing tables for centuries with its simplicity and rich, buttery flavor. A slice of this golden loaf transports you to a world where baking was an art, and every ingredient played a key role in creating something truly delightful.

The pound cake dates back to the early 18th century in Northern Europe, particularly in England. Its name comes from the original recipe, which called for one pound each of four ingredients: butter, sugar, eggs, and flour. This balance created a dense but deliciously rich cake. As the recipe spread across the world, variations began to emerge—some with additional flavors, some with lighter textures—but the basic principles remained the same.

Over time, vanilla became a popular addition, and it's easy to see why. Vanilla's sweet, floral notes elevate the pound cake, turning it into a more versatile treat that can be enjoyed in countless ways—whether as a simple tea-time snack, dressed up with fruits, or paired with cream or a glaze.

For me, eating a slice of vanilla pound cake is like pressing pause on the world for a moment. The delicate balance of flavors is both grounding and indulgent, and it reminds me of home—cozy afternoons spent with loved ones, or a quiet morning with a cup of coffee and nothing on the agenda. It's simple, but sometimes, simplicity is exactly what the soul craves.

So, if you ever find yourself in need of a little comfort or just a moment of joy, a slice of vanilla pound cake might just be the answer. After all, the classics never go out of style. So let's get started ,

Things you will need,

  1. Flour: 100 gm
  2. Powdered sugar: 100 gm
  3. Eggs : 2 ( roughly weighing 100gm )
  4. Butter : softened 100gm
  5. Vanilla essence: 2 tsp
  6. Baking soda: 2 tsp
  7. Baking powder: 4 tsp

How I made it,

  • Add softened butter and sugar together in a bowl and start beating with a whisk or hand mixer on medium speed. Cream the butter till it becomes pale , fluffy and sugar dissolves.
  • Add in eggs one by one , while whisking. The mixture should become almost doubled in volume by now.
  • Mix in vanilla essence
  • Sift in flour , baking powder and baking soda to the mixture. With a metal spoon fold it in to make a thick batter.
  • Line a loaf tin with parchment and butter.
  • Pour in the cake batter.
  • It will be baked low and slow. In a preheated oven baked at 160°c with fan on for 40 -45 mins , or till the tooth pick inserted at the centre comes out clear.
  • Let it cool down , slice it up and devour.

Do try this staple recipe . You can make variations .

With love,

Petuk Bong ❤️
